Ingredients

  • Almonds - 200 grams
  • Sugar - 75 grams
  • Cinnamon - 1 teaspoon
  • Butter - 50 grams, melted
  • Egg - 1, beaten
  • Warka pastry or phyllo dough - 4 sheets
  • Honey - 2 tablespoons
  • Water - 2 tablespoons
  • Sesame seeds - 2 tablespoons (for garnish)

Steps

  1. In a food processor, combine the almonds, sugar, and cinnamon until finely ground.
  2. Add the melted butter and beaten egg to the almond mixture, mixing until well combined.
  3. Lay out one sheet of warka pastry or phyllo dough on a clean surface and brush lightly with melted butter.
  4. Place a spoonful of the almond mixture at one end of the pastry sheet and fold it over to form a triangle, continuing to fold until you reach the opposite end.
  5. Seal the edges with a little water to ensure they stay closed during frying.
  6. Repeat with the remaining sheets and filling until all are made.
  7. Heat oil in a deep frying pan over medium heat and fry the briouats in batches until golden brown, about 3-4 minutes per side.
  8. Remove from the oil and drain on paper towels.
  9. In a small saucepan, combine honey and water and heat until warm, then dip each briouat in the honey mixture for a sweet glaze.
  10. Sprinkle with sesame seeds before serving.
