- Brioche bread - 4 slices
- Olive oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Carrot - 1 medium, grated
- Zucchini - 1 medium, grated
- Chickpeas - 200 grams, cooked
- Ras el Hanout - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Honey - 1 tablespoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh coriander - 2 tablespoons, chopped
- Almonds - 30 grams, toasted and chopped
Steps
- Heat olive oil in a pan over medium heat. Add the chopped onion and garlic, sauté until soft and translucent, about 5 minutes.
- Stir in the grated carrot and zucchini, cooking for another 5 minutes until they soften.
- Add the cooked chickpeas, ras el hanout, cinnamon, honey, salt, and black pepper. Cook for an additional 5 minutes, stirring occasionally.
- Remove from heat and stir in the chopped fresh coriander and toasted almonds. Allow the filling to cool slightly.
- Meanwhile, lightly toast the brioche slices in a separate pan or toaster until golden brown.
- Assemble the dish by placing a generous amount of the vegetable filling between two slices of brioche, creating a sandwich.
- Serve warm, optionally drizzling with additional honey.
