Ingredients

  • Brioche bread - 4 slices
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, grated
  • Zucchini - 1 medium, grated
  • Chickpeas - 200 grams, cooked
  • Ras el Hanout - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Honey - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh coriander - 2 tablespoons, chopped
  • Almonds - 30 grams, toasted and chopped

Steps

  1. Heat olive oil in a pan over medium heat. Add the chopped onion and garlic, sauté until soft and translucent, about 5 minutes.
  2. Stir in the grated carrot and zucchini, cooking for another 5 minutes until they soften.
  3. Add the cooked chickpeas, ras el hanout, cinnamon, honey, salt, and black pepper. Cook for an additional 5 minutes, stirring occasionally.
  4. Remove from heat and stir in the chopped fresh coriander and toasted almonds. Allow the filling to cool slightly.
  5. Meanwhile, lightly toast the brioche slices in a separate pan or toaster until golden brown.
  6. Assemble the dish by placing a generous amount of the vegetable filling between two slices of brioche, creating a sandwich.
  7. Serve warm, optionally drizzling with additional honey.
