Ingredients

  • All-purpose flour - 250 grams
  • Sugar - 50 grams
  • Active dry yeast - 7 grams
  • Salt - 5 grams
  • Milk - 100 ml (warm)
  • Eggs - 2 large
  • Butter - 75 grams (softened)
  • Ground cinnamon - 1 teaspoon
  • Chopped almonds - 50 grams
  • Orange blossom water - 1 tablespoon

Steps

  1. In a small bowl, combine warm milk and active dry yeast. Let it sit for about 5 minutes until frothy.
  2. In a large mixing bowl, whisk together the flour, sugar, and salt.
  3. Add the frothy yeast mixture, eggs, and orange blossom water to the dry ingredients. Mix until combined.
  4. Knead the dough on a floured surface for about 10 minutes until smooth and elastic.
  5. Gradually incorporate the softened butter into the dough, kneading until fully absorbed.
  6. Place the dough in a lightly greased bowl, cover with a cloth, and allow it to rise in a warm place for about 1 hour, or until doubled in size.
  7. After the dough has risen, punch it down and knead in the chopped almonds and ground cinnamon.
  8. Shape the dough into a round loaf and place it in a greased baking dish.
  9. Cover the loaf and let it rise again for about 30 minutes.
  10. Preheat the oven to 180°C (350°F).
  11. Bake the brioche for about 25-30 minutes, or until golden brown and a toothpick comes out clean.
  12. Let it cool slightly before slicing and serving.
