Ingredients

  • Olive oil - 2 tablespoons
  • Onion - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Zucchini - 1 medium, diced
  • Red bell pepper - 1 medium, diced
  • Tomato - 1 medium, chopped
  • Chickpeas - 100 grams, canned, drained and rinsed
  • Vegetable broth - 500 ml
  • Cumin - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon - 1, juiced

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for 3-4 minutes until translucent.
  2. Stir in the minced garlic and cook for an additional 1 minute until fragrant.
  3. Add the diced carrot, zucchini, and red bell pepper to the pot. Cook for about 5-6 minutes, stirring occasionally.
  4. Incorporate the chopped tomato, chickpeas, vegetable broth, cumin, cinnamon, paprika, salt, and black pepper. Bring the mixture to a boil.
  5. Reduce the heat to low and let the soup simmer for 15-20 minutes, allowing the flavors to meld and the vegetables to become tender.
  6. Remove the pot from heat, stir in the fresh parsley and lemon juice to brighten the flavors.
  7. Serve hot, garnished with additional parsley if desired.
