- Garlic - 2 cloves, minced
- Carrot - 1 medium, diced
- Zucchini - 1 medium, diced
- Red bell pepper - 1 medium, diced
- Tomato - 1 medium, chopped
- Chickpeas - 100 grams, canned, drained and rinsed
- Vegetable broth - 500 ml
- Cumin - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Lemon - 1, juiced
Steps
- In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for 3-4 minutes until translucent.
- Stir in the minced garlic and cook for an additional 1 minute until fragrant.
- Add the diced carrot, zucchini, and red bell pepper to the pot. Cook for about 5-6 minutes, stirring occasionally.
- Incorporate the chopped tomato, chickpeas, vegetable broth, cumin, cinnamon, paprika, salt, and black pepper. Bring the mixture to a boil.
- Reduce the heat to low and let the soup simmer for 15-20 minutes, allowing the flavors to meld and the vegetables to become tender.
- Remove the pot from heat, stir in the fresh parsley and lemon juice to brighten the flavors.
- Serve hot, garnished with additional parsley if desired.
