  • Olive oil - 2 tablespoons
  • Onion - 1 medium, chopped
  • Garlic - 2 cloves, minced
  • Celery - 1 stalk, chopped
  • Carrot - 1 small, diced
  • Zucchini - 1 small, diced
  • Tomato - 1 medium, diced
  • Chicken broth - 500 milliliters, low sodium
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh cilantro - for garnish

Steps

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Stir in the minced garlic, celery, and carrot, cooking for another 3-4 minutes.
  4. Add the diced chicken thighs to the pot and cook until browned on all sides, about 5-7 minutes.
  5. Incorporate the diced zucchini and tomato, mixing well.
  6. Sprinkle the cumin, paprika, cinnamon, salt, and black pepper over the mixture and stir to combine.
  7. Pour in the chicken broth, bring to a boil, then reduce heat to low and simmer for 15 minutes.
