  • Vegetable broth - 500 milliliters
  • Olive oil - 1 tablespoon
  • Lemon - 1 (juiced)

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until softened (about 3-4 minutes).
  2. Add the ground lamb to the pot, breaking it apart with a spoon. Cook until browned (about 5-7 minutes).
  3. Stir in the cumin, paprika, turmeric, salt, and black pepper. Cook for an additional 2 minutes to toast the spices.
  4. Add the finely chopped cauliflower to the pot and stir well to combine with the meat and spices.
  5. Pour in the vegetable broth and bring the mixture to a simmer. Cover and let it cook for 15 minutes, until the cauliflower is tender.
  6. Remove the pot from heat and stir in the chopped parsley, cilantro, and lemon juice.
  7. Serve the soup hot, garnished with additional herbs if desired.
