Ingredients

  • Bulgur wheat - 100 grams
  • Water - 250 ml
  • Cherry tomatoes - 100 grams, halved
  • Cucumber - 1 medium, diced
  • Red bell pepper - 1, diced
  • Red onion - 50 grams, finely chopped
  • Fresh parsley - 30 grams, chopped
  • Fresh mint - 15 grams, chopped
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Cumin powder - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a pot, bring 250 ml of water to a boil. Add bulgur wheat, reduce heat, cover, and simmer for 12-15 minutes or until all water is absorbed.
  2. Remove from heat and let it stand, covered, for an additional 5 minutes. Fluff the bulgur with a fork and let it cool.
  3. In a large mixing bowl, combine halved cherry tomatoes, diced cucumber, diced red bell pepper, finely chopped red onion, chopped parsley, and chopped mint.
  4. In a small bowl, whisk together olive oil, lemon juice, cumin powder, salt, and black pepper to create a dressing.
  5. Add the cooled bulgur to the vegetable mixture and pour the dressing over. Toss gently to combine all ingredients evenly.
  6. Serve immediately or refrigerate for 30 minutes to let the flavors meld.
