Ingredients

  • Bulgur wheat - 100 grams
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Zucchini - 1 medium, diced
  • Tomato - 1 medium, diced
  • Vegetable broth - 500 milliliters
  • Cumin - 1 teaspoon
  • Coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Chickpeas - 100 grams, cooked
  • Fresh parsley - for garnish

Steps

  1. In a medium pot, heat the olive oil over medium heat.
  2. Add the chopped onion and minced garlic, and sauté until the onion becomes translucent, about 3-4 minutes.
  3. Stir in the diced carrot and zucchini, cooking for another 5 minutes until they begin to soften.
  4. Add the diced tomato, cumin, coriander, paprika, salt, and black pepper, stirring well.
  5. Pour in the vegetable broth and bring the mixture to a boil.
  6. Once boiling, add the bulgur wheat and chickpeas. Reduce heat to low and cover the pot.
  7. Simmer for about 15 minutes or until the bulgur is tender and has absorbed most of the liquid.
  8. Remove from heat and let it sit for a few minutes before serving.
  9. Garnish with fresh parsley and enjoy your Boulghour Soup warm.
