- Bulgur wheat - 100 grams
- Olive oil - 2 tablespoons
- Onion - 1 medium, chopped
- Garlic - 2 cloves, minced
- Carrot - 1 medium, diced
- Zucchini - 1 medium, diced
- Tomato - 1 medium, diced
- Vegetable broth - 500 milliliters
- Cumin - 1 teaspoon
- Coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Chickpeas - 100 grams, cooked
- Fresh parsley - for garnish
Steps
- In a medium pot, heat the olive oil over medium heat.
- Add the chopped onion and minced garlic, and sauté until the onion becomes translucent, about 3-4 minutes.
- Stir in the diced carrot and zucchini, cooking for another 5 minutes until they begin to soften.
- Add the diced tomato, cumin, coriander, paprika, salt, and black pepper, stirring well.
- Pour in the vegetable broth and bring the mixture to a boil.
- Once boiling, add the bulgur wheat and chickpeas. Reduce heat to low and cover the pot.
- Simmer for about 15 minutes or until the bulgur is tender and has absorbed most of the liquid.
- Remove from heat and let it sit for a few minutes before serving.
- Garnish with fresh parsley and enjoy your Boulghour Soup warm.
