- Ground coriander - 1 teaspoon
- Smoked paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Fresh mint - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
- Garlic - 1 clove, minced
Steps
- In a large bowl, combine the sliced zucchini, red bell pepper, yellow bell pepper, red onion, and cherry tomatoes.
