  • Smoked paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Fresh mint - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon
  • Garlic - 1 clove, minced

Steps

  1. In a large bowl, combine the sliced zucchini, red bell pepper, yellow bell pepper, red onion, and cherry tomatoes.
  2. In a small bowl, whisk together the olive oil, ground cumin, ground coriander, smoked paprika, salt, and black pepper.
