  • Cherry tomatoes - 10, whole
  • Firm tofu - 200 grams, cubed
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. In a bowl, mix olive oil, minced garlic, cumin, coriander, paprika, salt, and black pepper to create a marinade.
  2. Add the cubed tofu and vegetable pieces (zucchini, bell peppers, onion, and cherry tomatoes) to the marinade, tossing to coat evenly. Let marinate for at least 15 minutes.
  3. Preheat a grill or grill pan over medium-high heat.
  4. Thread the marinated vegetables and tofu onto skewers, alternating between different ingredients.
  5. Grill the skewers for about 10-12 minutes, turning occasionally until the vegetables are tender and slightly charred.
  6. Remove from the grill and let cool slightly before serving. Garnish with fresh parsley.
