- Cherry tomatoes - 10, whole
- Firm tofu - 200 grams, cubed
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped (for garnish)
Steps
- In a bowl, mix olive oil, minced garlic, cumin, coriander, paprika, salt, and black pepper to create a marinade.
- Add the cubed tofu and vegetable pieces (zucchini, bell peppers, onion, and cherry tomatoes) to the marinade, tossing to coat evenly. Let marinate for at least 15 minutes.
- Preheat a grill or grill pan over medium-high heat.
- Thread the marinated vegetables and tofu onto skewers, alternating between different ingredients.
- Grill the skewers for about 10-12 minutes, turning occasionally until the vegetables are tender and slightly charred.
- Remove from the grill and let cool slightly before serving. Garnish with fresh parsley.
