Ingredients

  • Firm tofu - 200 grams
  • Olive oil - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Garlic powder - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Lemon juice - 1 tablespoon
  • Fresh parsley - 30 grams
  • Fresh cilantro - 30 grams
  • Cherry tomatoes - 100 grams
  • Cucumber - 1 small
  • Red onion - 1/2 small
  • Pita bread - 2 pieces

Steps

  1. Press the tofu for at least 15 minutes to remove excess moisture, then cut it into 2 cm cubes.
  2. In a bowl, mix olive oil, ground cumin, ground coriander, paprika, garlic powder, salt, black pepper, and lemon juice to create a marinade.
  3. Add the tofu cubes to the marinade and let it sit for 10 minutes, stirring occasionally to ensure even coating.
  4. While the tofu is marinating, prepare the herb salad by finely chopping the fresh parsley and cilantro.
  5. Dice the cherry tomatoes and cucumber, and thinly slice the red onion. Combine all veggies with the herbs in a bowl.
  6. Drizzle with olive oil and a pinch of salt, then toss to combine.
  7. Preheat a grill or grill pan over medium heat.
  8. Thread the marinated tofu onto skewers, then grill for about 8-10 minutes, turning occasionally, until golden brown and slightly charred.
  9. Warm the pita bread on the grill for a minute on each side.
  10. Serve the grilled tofu skewers alongside the herb salad and warm pita bread, garnished with extra herbs if desired.
