- Firm tofu - 200 grams

- Ground coriander - 1 teaspoon
- Paprika - 1 teaspoon

- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Lemon juice - 1 tablespoon
- Fresh parsley - 30 grams
- Fresh cilantro - 30 grams
- Cherry tomatoes - 100 grams
- Cucumber - 1 small
- Red onion - 1/2 small
- Pita bread - 2 pieces
Steps
- Press the tofu for at least 15 minutes to remove excess moisture, then cut it into 2 cm cubes.
- In a bowl, mix olive oil, ground cumin, ground coriander, paprika, garlic powder, salt, black pepper, and lemon juice to create a marinade.
- Add the tofu cubes to the marinade and let it sit for 10 minutes, stirring occasionally to ensure even coating.
- While the tofu is marinating, prepare the herb salad by finely chopping the fresh parsley and cilantro.
- Dice the cherry tomatoes and cucumber, and thinly slice the red onion. Combine all veggies with the herbs in a bowl.
- Drizzle with olive oil and a pinch of salt, then toss to combine.
- Preheat a grill or grill pan over medium heat.
- Thread the marinated tofu onto skewers, then grill for about 8-10 minutes, turning occasionally, until golden brown and slightly charred.
- Warm the pita bread on the grill for a minute on each side.
- Serve the grilled tofu skewers alongside the herb salad and warm pita bread, garnished with extra herbs if desired.
