- Cherry tomatoes - 200 grams
- Olive oil - 2 tablespoons
- Ground cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 30 grams, chopped
- Fresh cilantro - 30 grams, chopped
- Garlic - 1 clove, minced
- Lemon juice - 1 tablespoon
- Water - 2 tablespoons
Steps
- Preheat the grill or grill pan over medium heat.
- In a large bowl, combine the zucchini, red bell pepper, yellow bell pepper, red onion, and cherry tomatoes.
- Drizzle the olive oil over the vegetables and sprinkle with ground cumin, paprika, salt, and black pepper. Toss well to coat the vegetables evenly.
- Thread the marinated vegetables onto skewers, alternating between different types of vegetables.
- Grill the skewers for about 10-12 minutes, turning occasionally, until the vegetables are tender and slightly charred.
- While the vegetables are grilling, prepare the herb sauce by combining the chopped parsley, cilantro, minced garlic, lemon juice, and water in a small bowl. Mix well and adjust seasoning if necessary.
- Once the skewers are done, remove them from the grill and serve hot with the herb sauce drizzled on top.
