Ingredients

  • Lamb or beef liver - 200 grams
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Cumin - 1 teaspoon
  • Coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Turmeric - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Chicken or beef broth - 500 ml
  • Zucchini - 1 medium, diced
  • Tomato - 1 medium, diced
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - from 1/2 lemon

Steps

  1. Heat the olive oil in a large pot over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Add the minced garlic, cumin, coriander, paprika, turmeric, salt, and black pepper to the pot. Stir and cook for another 2 minutes until fragrant.
  3. Increase the heat to medium-high and add the liver. Sear for about 3-4 minutes until browned on all sides.
  4. Pour in the chicken or beef broth, bringing it to a boil. Reduce the heat to low and let it simmer for 10 minutes.
  5. Add the diced zucchini and tomato to the pot. Continue to simmer for another 10-15 minutes until the vegetables are tender.
  6. Stir in the chopped parsley and lemon juice just before serving.
