Ingredients
- Lamb or beef liver - 200 grams
- Olive oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Cumin - 1 teaspoon
- Coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Turmeric - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Chicken or beef broth - 500 ml
- Zucchini - 1 medium, diced
- Tomato - 1 medium, diced
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - from 1/2 lemon
Steps
- Heat the olive oil in a large pot over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic, cumin, coriander, paprika, turmeric, salt, and black pepper to the pot. Stir and cook for another 2 minutes until fragrant.
- Increase the heat to medium-high and add the liver. Sear for about 3-4 minutes until browned on all sides.
- Pour in the chicken or beef broth, bringing it to a boil. Reduce the heat to low and let it simmer for 10 minutes.
- Add the diced zucchini and tomato to the pot. Continue to simmer for another 10-15 minutes until the vegetables are tender.
- Stir in the chopped parsley and lemon juice just before serving.
