Ingredients

  • Lamb liver - 200 grams
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Coriander - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Lemon juice - 1 tablespoon
  • Fresh parsley - 2 tablespoons, chopped
  • Wooden skewers - 4 (soaked in water)

Steps

  1. Prepare the wooden skewers by soaking them in water for at least 30 minutes to prevent burning.
  2. Rinse the lamb liver under cold water and pat it dry with paper towels. Cut the liver into bite-sized pieces.
  3. In a bowl, mix olive oil, minced garlic, cumin, paprika, coriander, salt, black pepper, and lemon juice to create a marinade.
  4. Add the liver pieces to the marinade and toss to coat evenly. Cover and let it marinate in the refrigerator for at least 15 minutes.
  5. Preheat a grill or grill pan over medium-high heat.
  6. Thread the marinated liver pieces onto the soaked skewers, leaving a little space between each piece.
  7. Grill the skewers for about 8-10 minutes, turning occasionally, until the liver is cooked through and slightly charred.
  8. Remove from the grill and sprinkle with chopped fresh parsley before serving.
