Ingredients
- Lamb liver - 200 grams
- Olive oil - 2 tablespoons

- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Coriander - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Lemon juice - 1 tablespoon
- Fresh parsley - 2 tablespoons, chopped
- Wooden skewers - 4 (soaked in water)
Steps
- Prepare the wooden skewers by soaking them in water for at least 30 minutes to prevent burning.
- Rinse the lamb liver under cold water and pat it dry with paper towels. Cut the liver into bite-sized pieces.
- In a bowl, mix olive oil, minced garlic, cumin, paprika, coriander, salt, black pepper, and lemon juice to create a marinade.
- Add the liver pieces to the marinade and toss to coat evenly. Cover and let it marinate in the refrigerator for at least 15 minutes.
- Preheat a grill or grill pan over medium-high heat.
- Thread the marinated liver pieces onto the soaked skewers, leaving a little space between each piece.
- Grill the skewers for about 8-10 minutes, turning occasionally, until the liver is cooked through and slightly charred.
- Remove from the grill and sprinkle with chopped fresh parsley before serving.
