- Salt - 1 teaspoon
- Black pepper - ½ teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
- Skewers - 4 (if wooden, soaked in water for 30 minutes)
Steps
- Rinse the lamb liver under cold water and pat dry with paper towels.
- Cut the liver into bite-sized pieces and place them in a mixing bowl.
- In a separate bowl, combine olive oil, minced garlic, cumin, paprika, coriander, salt, black pepper, parsley, and lemon juice to create the marinade.
- Pour the marinade over the liver pieces, ensuring they are well coated. Cover and let marinate in the refrigerator for at least 15 minutes.
- Preheat your grill or grill pan over medium-high heat.
- Thread the marinated liver pieces onto the skewers, leaving a bit of space between each piece.
- Place the skewers on the grill and cook for about 3-4 minutes on each side, or until the liver is cooked through and slightly charred.
