Ingredients

  • Lamb liver - 300 grams

  • Paprika - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - ½ teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon
  • Skewers - 4 (if wooden, soaked in water for 30 minutes)

Steps

  1. Rinse the lamb liver under cold water and pat dry with paper towels.
  2. Cut the liver into bite-sized pieces and place them in a mixing bowl.
  3. In a separate bowl, combine olive oil, minced garlic, cumin, paprika, coriander, salt, black pepper, parsley, and lemon juice to create the marinade.
  4. Pour the marinade over the liver pieces, ensuring they are well coated. Cover and let marinate in the refrigerator for at least 15 minutes.
  5. Preheat your grill or grill pan over medium-high heat.
  6. Thread the marinated liver pieces onto the skewers, leaving a bit of space between each piece.
  7. Place the skewers on the grill and cook for about 3-4 minutes on each side, or until the liver is cooked through and slightly charred.
