Ingredients

  • Lamb liver - 300 grams
  • Olive oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Cumin powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon
  • Wooden skewers - 4 (soaked in water for 30 minutes)

Steps

  1. Rinse the lamb liver under cold water and pat dry with paper towels.
  2. Cut the liver into 2.5 cm cubes and place them in a mixing bowl.
  3. In a separate bowl, combine olive oil, minced garlic, cumin, paprika, salt, black pepper, chopped parsley, and lemon juice to create the marinade.
  4. Pour the marinade over the liver cubes and toss until evenly coated. Cover and refrigerate for 15 minutes.
  5. Preheat your grill or grill pan over medium-high heat.
  6. Thread the marinated liver cubes onto the soaked wooden skewers.
  7. Grill the skewers for 3-4 minutes on each side, or until the liver is cooked through but still tender.
