- Lamb liver - 300 grams

- Garlic - 3 cloves, minced
- Cumin powder - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
- Wooden skewers - 4 (soaked in water for 30 minutes)
Steps
- Rinse the lamb liver under cold water and pat dry with paper towels.
- Cut the liver into 2.5 cm cubes and place them in a mixing bowl.
- In a separate bowl, combine olive oil, minced garlic, cumin, paprika, salt, black pepper, chopped parsley, and lemon juice to create the marinade.
- Pour the marinade over the liver cubes and toss until evenly coated. Cover and refrigerate for 15 minutes.
- Preheat your grill or grill pan over medium-high heat.
- Thread the marinated liver cubes onto the soaked wooden skewers.
- Grill the skewers for 3-4 minutes on each side, or until the liver is cooked through but still tender.
- Remove from the grill and let rest for a couple of minutes before serving.
