- Lamb liver - 400 grams
- Olive oil - 2 tablespoons

- Coriander powder - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
- Skewers - 4 (if using wooden skewers, soak them in water for 30 minutes)
Steps
- Clean the lamb liver under cold water and pat dry with paper towels.
- Cut the liver into bite-sized cubes, approximately 2.5 cm each.
- In a bowl, mix olive oil, minced garlic, cumin, coriander, paprika, salt, black pepper, parsley, and lemon juice to create a marinade.
- Add the liver cubes to the marinade, ensuring they are well coated, and let them marinate for at least 15 minutes.
- Preheat a grill or grill pan over medium-high heat.
- Thread the marinated liver cubes onto the skewers, leaving a little space between each piece.
- Place the skewers on the grill and cook for about 3-4 minutes on each side, or until the liver is browned and cooked through.
- Remove from the grill and let rest for a minute before serving.
