Ingredients

  • Lamb liver - 400 grams
  • Olive oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Cumin powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon
  • Skewers - 4 (if using wooden skewers, soak them in water for 30 minutes)

Steps

  1. Clean the lamb liver under cold water and pat dry with paper towels.
  2. Cut the liver into bite-sized cubes, approximately 2.5 cm each.
  3. In a bowl, mix olive oil, minced garlic, cumin, coriander, paprika, salt, black pepper, parsley, and lemon juice to create a marinade.
  4. Add the liver cubes to the marinade, ensuring they are well coated, and let them marinate for at least 15 minutes.
  5. Preheat a grill or grill pan over medium-high heat.
  6. Thread the marinated liver cubes onto the skewers, leaving a little space between each piece.
  7. Place the skewers on the grill and cook for about 3-4 minutes on each side, or until the liver is browned and cooked through.
  8. Remove from the grill and let rest for a minute before serving.
