Ingredients
- Zucchini - 2 medium
- Ground lamb - 250 grams
- Garlic - 2 cloves, minced
- Cumin - 1 teaspoon
- Coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 2 tablespoons
- Fresh cilantro - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
- Feta cheese - 50 grams, crumbled (optional)
Steps
- Spiralize the zucchini using a spiralizer to create fettuccine-like strands. Set aside.
- In a bowl, combine ground lamb, minced garlic, cumin, coriander, paprika, salt, and black pepper. Mix well and form into small meatballs, about 2.5 cm in diameter.
- In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the meatballs and cook for about 8-10 minutes, turning occasionally, until browned and cooked through.
- Remove the meatballs from the skillet and set aside. In the same skillet, add the remaining tablespoon of olive oil and the zucchini fettuccine. Sauté for about 3-4 minutes until the zucchini is slightly tender but still has a bite.
- Return the meatballs to the skillet with the zucchini. Drizzle with lemon juice and toss to combine. Cook together for another 2 minutes.
- Serve warm, garnished with chopped cilantro and crumbled feta cheese, if desired.
