Ingredients

  • Zucchini - 2 medium
  • Ground lamb - 250 grams
  • Garlic - 2 cloves, minced
  • Cumin - 1 teaspoon
  • Coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 2 tablespoons
  • Fresh cilantro - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon
  • Feta cheese - 50 grams, crumbled (optional)

Steps

  1. Spiralize the zucchini using a spiralizer to create fettuccine-like strands. Set aside.
  2. In a bowl, combine ground lamb, minced garlic, cumin, coriander, paprika, salt, and black pepper. Mix well and form into small meatballs, about 2.5 cm in diameter.
  3. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the meatballs and cook for about 8-10 minutes, turning occasionally, until browned and cooked through.
  4. Remove the meatballs from the skillet and set aside. In the same skillet, add the remaining tablespoon of olive oil and the zucchini fettuccine. Sauté for about 3-4 minutes until the zucchini is slightly tender but still has a bite.
  5. Return the meatballs to the skillet with the zucchini. Drizzle with lemon juice and toss to combine. Cook together for another 2 minutes.
  6. Serve warm, garnished with chopped cilantro and crumbled feta cheese, if desired.
