  • Lamb shoulder - 400 grams, cut into cubes
  • Prunes - 100 grams, pitted
  • Garlic - 2 cloves, minced
  • Cumin - 1 teaspoon
  • Coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Ground cinnamon - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped (for garnish)
  • Skewers - 4 (soaked in water if wooden)

Steps

  1. In a bowl, combine the lamb cubes with minced garlic, cumin, coriander, paprika, cinnamon, salt, black pepper, and olive oil. Mix well to coat the meat evenly and marinate for at least 15 minutes.
  2. While the lamb is marinating, prepare the skewers by alternating pieces of lamb and prunes until all ingredients are used.
  3. Preheat a grill or grill pan over medium-high heat.
  4. Once hot, place the skewers on the grill and cook for about 10 minutes, turning occasionally, until the lamb is browned and cooked to your desired doneness.
  5. Remove from the grill and let rest for a few minutes.
