  • Lemon - 1, juiced
  • Skewers - 4 (soaked in water if wooden)

Steps

  1. Thoroughly clean the lamb intestines under cold water, then soak them in a mixture of water and lemon juice for 15 minutes.
  2. In a bowl, mix minced garlic, cumin, coriander, paprika, salt, black pepper, olive oil, and chopped parsley to create a marinade.
  3. Rinse the intestines again and cut them into manageable lengths (about 10 cm).
  4. Add the intestines to the marinade, ensuring they are well-coated. Cover and refrigerate for at least 30 minutes.
  5. Preheat the grill or a grill pan over medium heat.
  6. Thread the marinated intestines onto the skewers.
  7. Grill the skewers for about 10-12 minutes, turning occasionally, until they are well-cooked and slightly charred.
