- Chickpea flour - 150 grams
- Water - 200 milliliters
- Olive oil - 2 tablespoons
- Salt - 1 teaspoon
- Cumin powder - 1 teaspoon
- Paprika - 1 teaspoon
- Garlic powder - 1/2 teaspoon
- Zucchini - 100 grams, thinly sliced
- Red bell pepper - 100 grams, thinly sliced
- Cherry tomatoes - 100 grams, halved
- Red onion - 50 grams, thinly sliced
- Feta cheese - 50 grams, crumbled
- Fresh parsley - a handful, chopped
- Black olives - 30 grams, pitted and sliced
Steps
- In a mixing bowl, combine the chickpea flour, salt, cumin, paprika, and garlic powder.
- Gradually add water while whisking to form a smooth batter. Let it rest for 10 minutes.
- Preheat the oven to 220°C (428°F) and line a baking sheet with parchment paper.
- Pour half of the olive oil onto the baking sheet and spread it evenly.
- Pour the chickpea batter onto the baking sheet and spread it into a round or rectangular shape, about 1 cm thick.
- Bake the crust in the preheated oven for 15 minutes, or until firm and slightly golden.
- While the crust is baking, prepare the toppings by slicing the zucchini, red bell pepper, red onion, and halving the cherry tomatoes.
- Remove the crust from the oven and arrange the sliced vegetables evenly over the surface.
- Sprinkle the crumbled feta cheese, sliced black olives, and chopped parsley on top.
- Drizzle the remaining olive oil over the toppings and return to the oven for an additional 10 minutes, or until the vegetables are tender.
- Remove from the oven, let it cool slightly, slice, and serve warm.
