Ingredients

  • Chickpea flour - 150 grams
  • Water - 200 milliliters
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Cumin powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Garlic powder - 1/2 teaspoon
  • Zucchini - 100 grams, thinly sliced
  • Red bell pepper - 100 grams, thinly sliced
  • Cherry tomatoes - 100 grams, halved
  • Red onion - 50 grams, thinly sliced
  • Feta cheese - 50 grams, crumbled
  • Fresh parsley - a handful, chopped
  • Black olives - 30 grams, pitted and sliced

Steps

  1. In a mixing bowl, combine the chickpea flour, salt, cumin, paprika, and garlic powder.
  2. Gradually add water while whisking to form a smooth batter. Let it rest for 10 minutes.
  3. Preheat the oven to 220°C (428°F) and line a baking sheet with parchment paper.
  4. Pour half of the olive oil onto the baking sheet and spread it evenly.
  5. Pour the chickpea batter onto the baking sheet and spread it into a round or rectangular shape, about 1 cm thick.
  6. Bake the crust in the preheated oven for 15 minutes, or until firm and slightly golden.
  7. While the crust is baking, prepare the toppings by slicing the zucchini, red bell pepper, red onion, and halving the cherry tomatoes.
  8. Remove the crust from the oven and arrange the sliced vegetables evenly over the surface.
  9. Sprinkle the crumbled feta cheese, sliced black olives, and chopped parsley on top.
  10. Drizzle the remaining olive oil over the toppings and return to the oven for an additional 10 minutes, or until the vegetables are tender.
  11. Remove from the oven, let it cool slightly, slice, and serve warm.
