- Salt - 1/4 teaspoon
- Olive oil - 1 tablespoon
- Chopped walnuts - 30 grams
- Stevia or Erythritol - 1 tablespoon (optional)
Steps
- In a mixing bowl, combine the almond flour, coconut flour, baking powder, ground cinnamon, ground nutmeg, and salt. Mix well.
- In another bowl, whisk the eggs and then add the almond milk and olive oil. Mix until combined.
- Gradually pour the wet ingredients into the dry ingredients, stirring until a smooth batter forms. If using, add the stevia or erythritol.
- Fold in the chopped walnuts for added texture and flavor.
- Heat a non-stick skillet over medium heat and lightly grease it with olive oil.
- Pour 1/4 cup of the batter onto the skillet for each pancake. Cook for 2-3 minutes until bubbles form on the surface, then flip and cook for another 2-3 minutes until golden brown.
- Repeat with the remaining batter, adjusting the heat as necessary to prevent burning.
- Serve warm, optionally topped with more walnuts or a sprinkle of cinnamon.
