Ingredients

  • Almond flour - 100 grams
  • Coconut flour - 25 grams
  • Eggs - 2 large
  • Unsweetened almond milk - 100 ml
  • Baking powder - 1 teaspoon
  • Ground cinnamon - 1/2 teaspoon
  • Ground nutmeg - 1/4 teaspoon
  • Salt - 1/4 teaspoon
  • Olive oil - 1 tablespoon
  • Chopped walnuts - 30 grams
  • Stevia or Erythritol - 1 tablespoon (optional)

Steps

  1. In a mixing bowl, combine the almond flour, coconut flour, baking powder, ground cinnamon, ground nutmeg, and salt. Mix well.
  2. In another bowl, whisk the eggs and then add the almond milk and olive oil. Mix until combined.
  3. Gradually pour the wet ingredients into the dry ingredients, stirring until a smooth batter forms. If using, add the stevia or erythritol.
  4. Fold in the chopped walnuts for added texture and flavor.
  5. Heat a non-stick skillet over medium heat and lightly grease it with olive oil.
  6. Pour 1/4 cup of the batter onto the skillet for each pancake. Cook for 2-3 minutes until bubbles form on the surface, then flip and cook for another 2-3 minutes until golden brown.
  7. Repeat with the remaining batter, adjusting the heat as necessary to prevent burning.
  8. Serve warm, optionally topped with more walnuts or a sprinkle of cinnamon.
