- chickpea flour - 150 grams
- water - 300 ml
- ground cumin - 1 tsp
- ground coriander - 1 tsp
- turmeric - 1/2 tsp
- salt - 1/2 tsp
- olive oil - 2 tbsp
- red bell pepper - 1 medium, diced
- tomato - 2 medium, diced
- fresh parsley - 2 tbsp, chopped
- lemon juice - 1 tbsp
- black pepper - to taste
Steps
- In a mixing bowl, combine chickpea flour, water, ground cumin, ground coriander, turmeric, and salt. Whisk until smooth and let it rest for 10 minutes.
- Meanwhile, prepare the salsa by mixing diced red bell pepper, diced tomato, chopped parsley, lemon juice, and black pepper in a bowl. Set aside.
- Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat. Pour in half of the chickpea batter to form a pancake. Cook for about 3-4 minutes on each side until golden brown.
- Repeat the process for the second pancake, adding the remaining tablespoon of olive oil if necessary.
- Serve the pancakes warm, topped with the fresh salsa.
