Ingredients

  • chickpea flour - 150 grams
  • water - 300 ml
  • ground cumin - 1 tsp
  • ground coriander - 1 tsp
  • turmeric - 1/2 tsp
  • salt - 1/2 tsp
  • olive oil - 2 tbsp
  • red bell pepper - 1 medium, diced
  • tomato - 2 medium, diced
  • fresh parsley - 2 tbsp, chopped
  • lemon juice - 1 tbsp
  • black pepper - to taste

Steps

  1. In a mixing bowl, combine chickpea flour, water, ground cumin, ground coriander, turmeric, and salt. Whisk until smooth and let it rest for 10 minutes.
  2. Meanwhile, prepare the salsa by mixing diced red bell pepper, diced tomato, chopped parsley, lemon juice, and black pepper in a bowl. Set aside.
  3. Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat. Pour in half of the chickpea batter to form a pancake. Cook for about 3-4 minutes on each side until golden brown.
  4. Repeat the process for the second pancake, adding the remaining tablespoon of olive oil if necessary.
  5. Serve the pancakes warm, topped with the fresh salsa.
