Ingredients

  • almond flour - 150 grams
  • eggs - 2 large

  • baking powder - 1 teaspoon
  • cinnamon - 1/2 teaspoon
  • salt - 1/4 teaspoon
  • vanilla extract - 1 teaspoon
  • Greek yogurt - 100 grams
  • additional honey for drizzling - to taste
  • sliced almonds - 30 grams

Steps

  1. In a mixing bowl, combine almond flour, baking powder, cinnamon, and salt.
  2. In another bowl, whisk together the eggs, milk, honey, and vanilla extract until well blended.
  3. Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
  4. Heat a non-stick skillet over medium heat and lightly grease it with oil or butter.
  5. Pour 1/4 cup of the batter onto the skillet for each pancake. Cook for 2-3 minutes or until bubbles form on the surface.
  6. Flip the pancakes and cook for another 2-3 minutes until golden brown.
  7. While the pancakes are cooking, mix the Greek yogurt with a tablespoon of honey and a sprinkle of cinnamon in a small bowl.
