- Zucchini - 100 grams, grated
- Carrot - 100 grams, grated
- Red bell pepper - 50 grams, diced
- Onion - 50 grams, finely chopped
- Garlic - 1 clove, minced
- Cilantro - 2 tablespoons, chopped
- Ground cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Pepper - 1/4 teaspoon
- Olive oil - 2 tablespoons
- Lemon juice - 1 tablespoon
Steps
- Preheat the oven to 180°C (350°F).
- In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the onion and garlic, sautéing until soft and translucent.
- Add the grated zucchini, grated carrot, and diced red bell pepper to the skillet. Cook for about 5-7 minutes until the vegetables are tender.
- Stir in the chopped cilantro, ground cumin, paprika, salt, and pepper. Cook for another 2 minutes, then remove from heat and let the filling cool.
- Lay one sheet of phyllo pastry on a clean surface and brush lightly with olive oil. Place another sheet on top and repeat the process.
- Spoon a portion of the vegetable filling along one edge of the pastry, then fold the sides over the filling and roll it up tightly to form a log. Repeat with the remaining filling and phyllo sheets.
- Place the rolled pastries on a baking sheet lined with parchment paper. Brush the tops with the remaining olive oil.
- Bake in the preheated oven for 20-25 minutes, or until golden brown and crisp.
- Remove from the oven, drizzle with lemon juice, and let cool slightly before serving.
