  • Phyllo pastry - 4 sheets
  • Zucchini - 100 grams, grated
  • Carrot - 100 grams, grated
  • Red bell pepper - 50 grams, diced
  • Onion - 50 grams, finely chopped
  • Garlic - 1 clove, minced
  • Cilantro - 2 tablespoons, chopped
  • Ground cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Pepper - 1/4 teaspoon
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the onion and garlic, sautéing until soft and translucent.
  3. Add the grated zucchini, grated carrot, and diced red bell pepper to the skillet. Cook for about 5-7 minutes until the vegetables are tender.
  4. Stir in the chopped cilantro, ground cumin, paprika, salt, and pepper. Cook for another 2 minutes, then remove from heat and let the filling cool.
  5. Lay one sheet of phyllo pastry on a clean surface and brush lightly with olive oil. Place another sheet on top and repeat the process.
  6. Spoon a portion of the vegetable filling along one edge of the pastry, then fold the sides over the filling and roll it up tightly to form a log. Repeat with the remaining filling and phyllo sheets.
  7. Place the rolled pastries on a baking sheet lined with parchment paper. Brush the tops with the remaining olive oil.
  8. Bake in the preheated oven for 20-25 minutes, or until golden brown and crisp.
  9. Remove from the oven, drizzle with lemon juice, and let cool slightly before serving.
