Ingredients

  • Puff pastry - 250 grams
  • Zucchini - 100 grams, diced
  • Carrot - 100 grams, grated
  • Red bell pepper - 100 grams, diced
  • Onion - 50 grams, finely chopped
  • Garlic - 2 cloves, minced
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 2 tablespoons
  • Fresh parsley - 2 tablespoons, chopped
  • Sesame seeds - 1 tablespoon (for garnish)

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a large skillet, heat olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until they are soft and fragrant, about 3 minutes.
  3. Add the diced zucchini, grated carrot, and red bell pepper to the skillet. Cook for an additional 5-7 minutes until the vegetables are tender.
  4. Stir in the ground cumin, ground coriander, paprika, salt, and black pepper. Cook for another 2 minutes to allow the spices to bloom, then remove from heat.
  5. Mix in the chopped fresh parsley and let the filling cool slightly.
  6. Roll out the puff pastry on a lightly floured surface to about 3mm thick. Cut into squares or circles, about 10cm in diameter.
  7. Place a spoonful of the vegetable filling in the center of each pastry piece. Fold the pastry over to create a pocket or a triangle and press the edges to seal. You can crimp them with a fork for a decorative touch.
  8. Place the filled pastries on a baking sheet lined with parchment paper. Brush the tops lightly with olive oil and sprinkle with sesame seeds.
  9. Bake in the preheated oven for 20-25 minutes, or until golden brown and puffed up.
  10. Remove from the oven and let cool slightly before serving.
