- Puff pastry - 250 grams
- Zucchini - 100 grams, diced
- Carrot - 100 grams, grated
- Red bell pepper - 100 grams, diced
- Onion - 50 grams, finely chopped
- Garlic - 2 cloves, minced
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Paprika - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 2 tablespoons
- Fresh parsley - 2 tablespoons, chopped
- Sesame seeds - 1 tablespoon (for garnish)
Steps
- Preheat the oven to 200°C (400°F).
- In a large skillet, heat olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until they are soft and fragrant, about 3 minutes.
- Add the diced zucchini, grated carrot, and red bell pepper to the skillet. Cook for an additional 5-7 minutes until the vegetables are tender.
- Stir in the ground cumin, ground coriander, paprika, salt, and black pepper. Cook for another 2 minutes to allow the spices to bloom, then remove from heat.
- Mix in the chopped fresh parsley and let the filling cool slightly.
- Roll out the puff pastry on a lightly floured surface to about 3mm thick. Cut into squares or circles, about 10cm in diameter.
- Place a spoonful of the vegetable filling in the center of each pastry piece. Fold the pastry over to create a pocket or a triangle and press the edges to seal. You can crimp them with a fork for a decorative touch.
- Place the filled pastries on a baking sheet lined with parchment paper. Brush the tops lightly with olive oil and sprinkle with sesame seeds.
- Bake in the preheated oven for 20-25 minutes, or until golden brown and puffed up.
- Remove from the oven and let cool slightly before serving.
