Ingredients

  • Eggs - 4 large
  • Zucchini - 150 grams, grated
  • Feta cheese - 100 grams, crumbled
  • Fresh parsley - 2 tablespoons, chopped
  • Cumin powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 1 tablespoon
  • Cherry tomatoes - 100 grams, halved

Steps

  1. Preheat a non-stick skillet over medium heat and add the olive oil.
  2. In a mixing bowl, whisk together the eggs, cumin, paprika, salt, and black pepper until well combined.
  3. Add the grated zucchini, crumbled feta cheese, and chopped parsley to the egg mixture and stir gently to combine.
  4. Pour the egg mixture into the preheated skillet, spreading it evenly.
  5. Cook for about 5-7 minutes until the edges start to set, then gently lift the edges with a spatula and tilt the skillet to allow uncooked egg to flow to the edges.
  6. Once the top is mostly set (about 10-12 minutes total), add the halved cherry tomatoes on top.
  7. Cover the skillet with a lid and cook for another 3-5 minutes until the eggs are fully cooked and the tomatoes are slightly softened.
  8. Slide the Boulangerie de Fès onto a serving plate, cut into wedges, and serve warm.
