Ingredients
- Eggs - 4 large
- Zucchini - 150 grams, grated
- Feta cheese - 100 grams, crumbled
- Fresh parsley - 2 tablespoons, chopped
- Cumin powder - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 1 tablespoon
- Cherry tomatoes - 100 grams, halved
Steps
- Preheat a non-stick skillet over medium heat and add the olive oil.
- In a mixing bowl, whisk together the eggs, cumin, paprika, salt, and black pepper until well combined.
- Add the grated zucchini, crumbled feta cheese, and chopped parsley to the egg mixture and stir gently to combine.
- Pour the egg mixture into the preheated skillet, spreading it evenly.
- Cook for about 5-7 minutes until the edges start to set, then gently lift the edges with a spatula and tilt the skillet to allow uncooked egg to flow to the edges.
- Once the top is mostly set (about 10-12 minutes total), add the halved cherry tomatoes on top.
- Cover the skillet with a lid and cook for another 3-5 minutes until the eggs are fully cooked and the tomatoes are slightly softened.
- Slide the Boulangerie de Fès onto a serving plate, cut into wedges, and serve warm.
