Ingredients

  • Whole wheat flour - 200 grams
  • Semolina flour - 50 grams
  • Warm water - 250 ml
  • Active dry yeast - 7 grams
  • Honey - 1 tablespoon
  • Salt - 1 teaspoon
  • Olive oil - 1 tablespoon
  • Sesame seeds - 2 tablespoons
  • Cumin powder - 1 teaspoon
  • Black pepper - 1/2 teaspoon

Steps

  1. In a small bowl, dissolve the active dry yeast and honey in warm water. Let it sit for about 10 minutes until frothy.
  2. In a large mixing bowl, combine whole wheat flour, semolina flour, salt, cumin powder, and black pepper.
  3. Add the frothy yeast mixture and olive oil to the dry ingredients. Mix until a dough forms.
  4. Knead the dough on a floured surface for about 10 minutes until smooth and elastic.
  5. Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 30 minutes, or until doubled in size.
  6. Preheat your oven to 220°C (428°F).
  7. Punch down the risen dough and shape it into a round loaf. Sprinkle sesame seeds on top and gently press them into the dough.
  8. Transfer the loaf onto a baking sheet lined with parchment paper. Allow it to rest for 10 minutes.
  9. Bake the bread in the preheated oven for 20-25 minutes, or until golden brown and sounds hollow when tapped on the bottom.
  10. Remove from the oven and let it cool on a wire rack before slicing.
