Ingredients

  • Whole wheat flour - 200 grams
  • Warm water - 120 ml
  • Active dry yeast - 5 grams
  • Olive oil - 1 tablespoon
  • Salt - 1 teaspoon
  • Ground cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Chopped onion - 50 grams
  • Chopped bell pepper - 50 grams
  • Chopped tomato - 50 grams
  • Chopped fresh parsley - 2 tablespoons
  • Chili flakes - 1/2 teaspoon
  • Black pepper - to taste

Steps

  1. In a bowl, combine warm water and yeast, allowing it to activate for about 5 minutes until frothy.
  2. In a large mixing bowl, combine whole wheat flour, salt, ground cumin, and paprika.
  3. Make a well in the center of the flour mixture, then add the activated yeast mixture and olive oil. Mix until a dough forms.
  4. Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic. Place it in a greased bowl, cover, and let it rise in a warm place for 20 minutes.
  5. While the dough is rising, prepare the filling by sautéing chopped onion, bell pepper, and tomato in a pan with a little olive oil for about 5 minutes. Stir in parsley, chili flakes, and black pepper, and then remove from heat.
  6. Once the dough has risen, divide it into two equal portions. Roll each portion into a flat circle about 1 cm thick.
  7. Place half of the vegetable filling in the center of each dough circle. Fold the edges over to seal the filling inside, shaping it into a round bun.
  8. Heat a non-stick skillet over medium heat. Cook each bun for about 5-7 minutes on each side until golden brown and cooked through.
  9. Serve warm, garnished with additional parsley if desired.
