- Zucchini - 1 medium, diced
- Cauliflower florets - 150 grams
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Chicken or vegetable broth - 500 ml
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
Steps
- In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until softened, about 3-4 minutes.
- Stir in the minced garlic, diced carrot, and celery, cooking for another 3-4 minutes until the vegetables begin to soften.
- Add the diced zucchini and cauliflower florets to the pot, followed by the cumin, coriander, paprika, salt, and black pepper. Stir well to combine.
- Pour in the chicken or vegetable broth and bring the mixture to a gentle simmer. Cover and let it cook for 15 minutes, or until the vegetables are tender.
- Remove the pot from heat and stir in the chopped parsley and lemon juice for added freshness.
