  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Zucchini - 1 medium, diced
  • Cauliflower florets - 150 grams
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Chicken or vegetable broth - 500 ml
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until softened, about 3-4 minutes.
  2. Stir in the minced garlic, diced carrot, and celery, cooking for another 3-4 minutes until the vegetables begin to soften.
  3. Add the diced zucchini and cauliflower florets to the pot, followed by the cumin, coriander, paprika, salt, and black pepper. Stir well to combine.
  4. Pour in the chicken or vegetable broth and bring the mixture to a gentle simmer. Cover and let it cook for 15 minutes, or until the vegetables are tender.
  5. Remove the pot from heat and stir in the chopped parsley and lemon juice for added freshness.
  6. Serve warm, garnished with additional parsley if desired.
