Ingredients
- all-purpose flour - 200 grams
- warm water - 100 ml
- olive oil - 30 ml
- salt - 5 grams
- potato - 150 grams, peeled and diced
- carrot - 100 grams, peeled and diced
- onion - 50 grams, finely chopped
- garlic - 2 cloves, minced
- ground cumin - 1 teaspoon
- ground coriander - 1 teaspoon
- paprika - 1 teaspoon
- black pepper - 1/2 teaspoon
- fresh parsley - 2 tablespoons, chopped
- lemon juice - 1 tablespoon
- water - 1 liter for boiling
Steps
- In a mixing bowl, combine flour and salt. Gradually mix in warm water and olive oil until a dough forms. Knead for about 5 minutes until smooth. Cover and let it rest for 20 minutes.
- Boil the diced potatoes and carrots in salted water for 10-15 minutes until tender. Drain and let cool slightly.
- In a skillet over medium heat, sauté the onion and garlic in a little olive oil until translucent. Add the boiled potatoes and carrots, along with cumin, coriander, paprika, black pepper, and parsley. Stir well and cook for another 5 minutes. Remove from heat and stir in lemon juice.
- Preheat your oven to 200°C (390°F). Divide the dough into 4 equal pieces. Roll each piece into a thin circle on a floured surface.
- Place a generous spoonful of the vegetable filling in the center of each dough circle. Fold the dough over to create a half-moon shape and seal the edges by pressing with a fork.
- Place the filled pastries on a baking sheet lined with parchment paper. Brush the tops lightly with olive oil.
- Bake in the preheated oven for 20-25 minutes or until golden brown. Remove and let cool slightly before serving.
