Ingredients

  • all-purpose flour - 200 grams
  • warm water - 100 ml
  • olive oil - 30 ml
  • salt - 5 grams
  • potato - 150 grams, peeled and diced
  • carrot - 100 grams, peeled and diced
  • onion - 50 grams, finely chopped
  • garlic - 2 cloves, minced
  • ground cumin - 1 teaspoon
  • ground coriander - 1 teaspoon
  • paprika - 1 teaspoon
  • black pepper - 1/2 teaspoon
  • fresh parsley - 2 tablespoons, chopped
  • lemon juice - 1 tablespoon
  • water - 1 liter for boiling

Steps

  1. In a mixing bowl, combine flour and salt. Gradually mix in warm water and olive oil until a dough forms. Knead for about 5 minutes until smooth. Cover and let it rest for 20 minutes.
  2. Boil the diced potatoes and carrots in salted water for 10-15 minutes until tender. Drain and let cool slightly.
  3. In a skillet over medium heat, sauté the onion and garlic in a little olive oil until translucent. Add the boiled potatoes and carrots, along with cumin, coriander, paprika, black pepper, and parsley. Stir well and cook for another 5 minutes. Remove from heat and stir in lemon juice.
  4. Preheat your oven to 200°C (390°F). Divide the dough into 4 equal pieces. Roll each piece into a thin circle on a floured surface.
  5. Place a generous spoonful of the vegetable filling in the center of each dough circle. Fold the dough over to create a half-moon shape and seal the edges by pressing with a fork.
  6. Place the filled pastries on a baking sheet lined with parchment paper. Brush the tops lightly with olive oil.
  7. Bake in the preheated oven for 20-25 minutes or until golden brown. Remove and let cool slightly before serving.
