Ingredients
- Dried fava beans - 200 grams
- Garlic - 2 cloves, minced
- Cumin powder - 1 teaspoon
- Paprika - 1 teaspoon
- Ground coriander - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - 2 tablespoons
- Water - 750 ml
- Fresh parsley - 2 tablespoons, chopped
- Lemon wedges - 2, for serving
Steps
- Soak the dried fava beans in water overnight, or for at least 8 hours.
- Drain and rinse the fava beans, then place them in a large pot with 750 ml of fresh water.
- Add minced garlic, cumin, paprika, coriander, salt, and black pepper to the pot.
- Bring the mixture to a boil, then reduce the heat to low and simmer for about 40-45 minutes, or until the beans are soft and tender.
- Using a hand blender or a regular blender, puree the mixture until smooth. If it's too thick, add a little more water to reach your desired consistency.
- Taste and adjust seasoning if necessary. Stir in 1 tablespoon of olive oil for added richness.
- Serve the Bissara hot, drizzled with the remaining tablespoon of olive oil and topped with chopped parsley. Accompany with lemon wedges on the side.
