Ingredients

  • Dried fava beans - 200 grams
  • Garlic - 2 cloves, minced
  • Cumin powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Water - 750 ml
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon wedges - 2, for serving

Steps

  1. Soak the dried fava beans in water overnight, or for at least 8 hours.
  2. Drain and rinse the fava beans, then place them in a large pot with 750 ml of fresh water.
  3. Add minced garlic, cumin, paprika, coriander, salt, and black pepper to the pot.
  4. Bring the mixture to a boil, then reduce the heat to low and simmer for about 40-45 minutes, or until the beans are soft and tender.
  5. Using a hand blender or a regular blender, puree the mixture until smooth. If it's too thick, add a little more water to reach your desired consistency.
  6. Taste and adjust seasoning if necessary. Stir in 1 tablespoon of olive oil for added richness.
  7. Serve the Bissara hot, drizzled with the remaining tablespoon of olive oil and topped with chopped parsley. Accompany with lemon wedges on the side.
