Ingredients

  • Dried fava beans - 200 grams
  • Water - 500 ml
  • Garlic - 2 cloves, minced
  • Cumin powder - 1 teaspoon
  • Salt - 1 teaspoon
  • Olive oil - 4 tablespoons
  • Lemon juice - 1 tablespoon
  • Paprika - 1/2 teaspoon
  • Fresh parsley - for garnish

Steps

  1. Soak the dried fava beans in water overnight or for at least 8 hours.
  2. Drain and rinse the fava beans, then place them in a pot with 500 ml of fresh water.
  3. Add minced garlic, cumin, and salt to the pot, then bring to a boil over medium heat.
  4. Reduce heat to low, cover, and simmer for 30-40 minutes, or until the beans are soft.
  5. Once cooked, drain any excess water and transfer the beans to a blender or food processor.
  6. Blend the beans until smooth, adding a little water if necessary to achieve a creamy consistency.
  7. Stir in lemon juice and adjust seasoning to taste.
  8. Divide the bissara into two bowls, drizzle with olive oil, and sprinkle paprika on top.
  9. Garnish with freshly chopped parsley and serve warm.
