Ingredients

  • Dried fava beans - 100 grams
  • Water - 1 liter
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Cumin powder - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh mint leaves - 10 grams, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. Rinse the dried fava beans under cold water and soak them in water for at least 6 hours or overnight.
  2. After soaking, drain the beans and place them in a pot with 1 liter of fresh water. Bring to a boil and then reduce to a simmer for about 30 minutes, or until the beans are tender.
  3. Once cooked, drain the beans, reserving some of the cooking water. Blend the fava beans with a little bit of the reserved water until smooth and creamy.
  4. In the same pot, heat the olive oil over medium heat and sauté the minced garlic until fragrant, about 1 minute.
  5. Add the blended fava beans to the pot, along with cumin, salt, and black pepper. Stir well and add more reserved water if necessary to reach your desired consistency.
  6. Let the soup simmer for an additional 10 minutes to allow the flavors to meld.
  7. Remove from heat and stir in the chopped fresh mint and lemon juice just before serving.
  8. Serve hot, garnished with extra mint leaves and a drizzle of olive oil if desired.
