Ingredients
- Dried fava beans - 100 grams
- Water - 1 liter
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Cumin powder - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh mint leaves - 10 grams, chopped
- Lemon juice - 1 tablespoon
Steps
- Rinse the dried fava beans under cold water and soak them in water for at least 6 hours or overnight.
- After soaking, drain the beans and place them in a pot with 1 liter of fresh water. Bring to a boil and then reduce to a simmer for about 30 minutes, or until the beans are tender.
- Once cooked, drain the beans, reserving some of the cooking water. Blend the fava beans with a little bit of the reserved water until smooth and creamy.
- In the same pot, heat the olive oil over medium heat and sauté the minced garlic until fragrant, about 1 minute.
- Add the blended fava beans to the pot, along with cumin, salt, and black pepper. Stir well and add more reserved water if necessary to reach your desired consistency.
- Let the soup simmer for an additional 10 minutes to allow the flavors to meld.
- Remove from heat and stir in the chopped fresh mint and lemon juice just before serving.
- Serve hot, garnished with extra mint leaves and a drizzle of olive oil if desired.
