Ingredients
- Dried fava beans - 100 grams
- Fennel bulb - 1 medium, diced
- Garlic - 2 cloves, minced
- Onion - 1 medium, chopped
- Carrot - 1 medium, diced
- Cumin powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Olive oil - 2 tablespoons
- Vegetable broth - 500 milliliters
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- Soak the dried fava beans in water for at least 8 hours or overnight, then drain and rinse.
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the diced fennel, carrot, and minced garlic to the pot. Sauté for another 5-7 minutes until the vegetables are softened.
- Stir in the cumin and coriander powders, cooking for 1 minute until fragrant.
- Add the soaked fava beans and vegetable broth to the pot. Bring to a boil, then reduce heat to low and simmer for about 25-30 minutes, or until the fava beans are tender.
- Using an immersion blender, puree the soup until smooth. If you prefer a chunkier texture, blend only half of the soup.
- Season with salt and black pepper to taste. Serve hot, garnished with fresh parsley.
