Ingredients

  • Dried fava beans - 150 grams
  • Canned chickpeas - 200 grams, drained and rinsed
  • Garlic - 3 cloves, minced
  • Onion - 1 medium, finely chopped
  • Olive oil - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1/2 teaspoon
  • Salt - 1 teaspoon (to taste)
  • Black pepper - 1/2 teaspoon
  • Vegetable broth - 750 milliliters
  • Fresh parsley - for garnish
  • Lemon wedges - for serving

Steps

  1. Soak the dried fava beans in water overnight or for at least 8 hours. Drain and rinse before cooking.
  2. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until softened, about 5 minutes.
  3. Add the minced garlic, ground cumin, ground coriander, paprika, salt, and black pepper to the pot. Cook for an additional 2 minutes until fragrant.
  4. Add the soaked fava beans and vegetable broth to the pot. Bring to a boil, then reduce the heat and let it simmer for 30 minutes, or until the beans are tender.
  5. Once the fava beans are soft, use an immersion blender to blend the soup until smooth. If you don't have an immersion blender, carefully transfer the mixture to a regular blender in batches and blend until creamy.
  6. Stir in the drained chickpeas and cook for an additional 5 minutes until heated through.
  7. Serve the soup hot, garnished with fresh parsley and a drizzle of olive oil. Accompany with lemon wedges on the side.
