Ingredients
- Dried fava beans - 150 grams
- Canned chickpeas - 200 grams, drained and rinsed
- Garlic - 3 cloves, minced
- Onion - 1 medium, finely chopped
- Olive oil - 2 tablespoons
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Paprika - 1/2 teaspoon
- Salt - 1 teaspoon (to taste)
- Black pepper - 1/2 teaspoon
- Vegetable broth - 750 milliliters
- Fresh parsley - for garnish
- Lemon wedges - for serving
Steps
- Soak the dried fava beans in water overnight or for at least 8 hours. Drain and rinse before cooking.
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until softened, about 5 minutes.
- Add the minced garlic, ground cumin, ground coriander, paprika, salt, and black pepper to the pot. Cook for an additional 2 minutes until fragrant.
- Add the soaked fava beans and vegetable broth to the pot. Bring to a boil, then reduce the heat and let it simmer for 30 minutes, or until the beans are tender.
- Once the fava beans are soft, use an immersion blender to blend the soup until smooth. If you don't have an immersion blender, carefully transfer the mixture to a regular blender in batches and blend until creamy.
- Stir in the drained chickpeas and cook for an additional 5 minutes until heated through.
- Serve the soup hot, garnished with fresh parsley and a drizzle of olive oil. Accompany with lemon wedges on the side.
