Ingredients
- Dried fava beans - 150 grams
- Water - 500 ml
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Lemon juice - 1 tablespoon
- Cherry tomatoes - 100 grams, halved
- Red bell pepper - 1, diced
- Fresh parsley - 2 tablespoons, chopped
- Feta cheese - 50 grams, crumbled (optional)
- Chili flakes - to taste (optional)
Steps
- Soak the dried fava beans in water overnight, then drain and rinse them.
- In a pot, add the soaked fava beans and 500 ml of fresh water. Bring to a boil and then simmer for about 30-40 minutes or until the beans are soft.
- Drain the fava beans and transfer them to a blender. Add olive oil, minced garlic, cumin, paprika, salt, black pepper, and lemon juice. Blend until smooth and creamy, adding a little water if necessary.
- Preheat your oven to 200°C (390°F).
- Spread the fava bean mixture evenly on a pizza stone or a baking sheet lined with parchment paper, forming a circular shape about 1 cm thick.
- Layer the halved cherry tomatoes, diced red bell pepper, and crumbled feta cheese on top of the fava bean base.
- Sprinkle with fresh parsley and chili flakes if desired.
- Bake in the preheated oven for 15-20 minutes until the edges are slightly crispy.
- Remove from the oven and let it cool for a few minutes before slicing and serving.
