Ingredients

  • Dried fava beans - 150 grams
  • Water - 500 ml
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Lemon juice - 1 tablespoon
  • Cherry tomatoes - 100 grams, halved
  • Red bell pepper - 1, diced
  • Fresh parsley - 2 tablespoons, chopped
  • Feta cheese - 50 grams, crumbled (optional)
  • Chili flakes - to taste (optional)

Steps

  1. Soak the dried fava beans in water overnight, then drain and rinse them.
  2. In a pot, add the soaked fava beans and 500 ml of fresh water. Bring to a boil and then simmer for about 30-40 minutes or until the beans are soft.
  3. Drain the fava beans and transfer them to a blender. Add olive oil, minced garlic, cumin, paprika, salt, black pepper, and lemon juice. Blend until smooth and creamy, adding a little water if necessary.
  4. Preheat your oven to 200°C (390°F).
  5. Spread the fava bean mixture evenly on a pizza stone or a baking sheet lined with parchment paper, forming a circular shape about 1 cm thick.
  6. Layer the halved cherry tomatoes, diced red bell pepper, and crumbled feta cheese on top of the fava bean base.
  7. Sprinkle with fresh parsley and chili flakes if desired.
  8. Bake in the preheated oven for 15-20 minutes until the edges are slightly crispy.
  9. Remove from the oven and let it cool for a few minutes before slicing and serving.
