Ingredients

  • Zucchini - 2 medium (for zoodles)
  • Fava beans (cooked and drained) - 200 grams
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Cumin powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. Using a spiralizer or a vegetable peeler, create zucchini noodles (zoodles) from the two medium zucchinis and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
  3. Add the cooked fava beans to the skillet, along with cumin, paprika, salt, and black pepper. Stir and cook for about 5 minutes until heated through.
  4. Using a potato masher or fork, mash the fava beans slightly to create a creamy consistency.
  5. Add the lemon juice to the fava bean mixture and stir to combine.
  6. In a separate pot, bring water to a boil and blanch the zucchini noodles for 2-3 minutes until slightly tender but still crisp.
  7. Drain the zoodles and add them to the skillet with the fava bean mixture. Toss well to combine and cook for an additional 2 minutes.
  8. Serve hot, garnished with fresh chopped parsley.
