Ingredients
- Zucchini - 2 medium (for zoodles)
- Fava beans (cooked and drained) - 200 grams
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Cumin powder - 1 teaspoon
- Paprika - 1 teaspoon
- Lemon juice - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - 2 tablespoons, chopped (for garnish)
Steps
- Using a spiralizer or a vegetable peeler, create zucchini noodles (zoodles) from the two medium zucchinis and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
- Add the cooked fava beans to the skillet, along with cumin, paprika, salt, and black pepper. Stir and cook for about 5 minutes until heated through.
- Using a potato masher or fork, mash the fava beans slightly to create a creamy consistency.
- Add the lemon juice to the fava bean mixture and stir to combine.
- In a separate pot, bring water to a boil and blanch the zucchini noodles for 2-3 minutes until slightly tender but still crisp.
- Drain the zoodles and add them to the skillet with the fava bean mixture. Toss well to combine and cook for an additional 2 minutes.
- Serve hot, garnished with fresh chopped parsley.
