Ingredients

  • Fava beans (dried) - 100g
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Cumin powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Whole wheat pizza base - 2 (approx. 20cm each)
  • Zucchini - 1 small, sliced
  • Red bell pepper - 1, sliced
  • Cherry tomatoes - 100g, halved
  • Fresh parsley - 2 tablespoons, chopped
  • Feta cheese - 50g, crumbled
  • Lemon juice - 1 tablespoon

Steps

  1. Soak the fava beans in water overnight, then drain and rinse them.
  2. In a pot, cover the fava beans with fresh water, bring to a boil, then simmer for about 30 minutes until soft. Drain and set aside.
  3. In a blender, combine the cooked fava beans, 1 tablespoon olive oil, minced garlic, cumin, paprika, salt, and black pepper. Blend until smooth to create a spread.
  4. Preheat the oven to 220°C (428°F).
  5. Place the whole wheat pizza bases on a baking sheet lined with parchment paper.
  6. Spread the fava bean mixture evenly over each pizza base.
  7. Top the pizzas with sliced zucchini, red bell pepper, and cherry tomatoes.
  8. Sprinkle crumbled feta cheese and chopped parsley over the top.
  9. Drizzle with the remaining olive oil and lemon juice.
  10. Bake in the preheated oven for 12-15 minutes, or until the edges of the crust are golden and the vegetables are tender.
  11. Remove from the oven, allow to cool slightly, and slice the pizzas to serve.
