Ingredients
- Fava beans (dried) - 100g
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Cumin powder - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Whole wheat pizza base - 2 (approx. 20cm each)
- Zucchini - 1 small, sliced
- Red bell pepper - 1, sliced
- Cherry tomatoes - 100g, halved
- Fresh parsley - 2 tablespoons, chopped
- Feta cheese - 50g, crumbled
- Lemon juice - 1 tablespoon
Steps
- Soak the fava beans in water overnight, then drain and rinse them.
- In a pot, cover the fava beans with fresh water, bring to a boil, then simmer for about 30 minutes until soft. Drain and set aside.
- In a blender, combine the cooked fava beans, 1 tablespoon olive oil, minced garlic, cumin, paprika, salt, and black pepper. Blend until smooth to create a spread.
- Preheat the oven to 220°C (428°F).
- Place the whole wheat pizza bases on a baking sheet lined with parchment paper.
- Spread the fava bean mixture evenly over each pizza base.
- Top the pizzas with sliced zucchini, red bell pepper, and cherry tomatoes.
- Sprinkle crumbled feta cheese and chopped parsley over the top.
- Drizzle with the remaining olive oil and lemon juice.
- Bake in the preheated oven for 12-15 minutes, or until the edges of the crust are golden and the vegetables are tender.
- Remove from the oven, allow to cool slightly, and slice the pizzas to serve.
