Ingredients

  • Zucchini - 2 medium
  • Dried fava beans - 150 grams
  • Garlic - 2 cloves, minced
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Soak the dried fava beans in water overnight. Drain and rinse before cooking.
  2. In a pot, cover the soaked fava beans with fresh water, bring to a boil, then simmer for about 30 minutes or until tender. Drain and set aside.
  3. While the beans are cooking, spiralize the zucchini into fettuccine noodles and set aside.
  4. In a skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
  5. Add the cooked fava beans, cumin, paprika, salt, and pepper to the skillet. Mash the beans slightly while mixing for a creamy texture.
  6. Stir in lemon juice and a splash of water if necessary to reach a sauce-like consistency. Cook for an additional 5 minutes.
  7. In another pan, lightly sauté the zucchini noodles in a bit of olive oil for about 2-3 minutes until just tender.
  8. Toss the zucchini noodles with the fava bean sauce until well coated.
  9. Serve hot, garnished with fresh parsley.
