Ingredients
- Zucchini - 2 medium
- Dried fava beans - 150 grams
- Garlic - 2 cloves, minced
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Olive oil - 2 tablespoons
- Lemon juice - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - 2 tablespoons, chopped
Steps
- Soak the dried fava beans in water overnight. Drain and rinse before cooking.
- In a pot, cover the soaked fava beans with fresh water, bring to a boil, then simmer for about 30 minutes or until tender. Drain and set aside.
- While the beans are cooking, spiralize the zucchini into fettuccine noodles and set aside.
- In a skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
- Add the cooked fava beans, cumin, paprika, salt, and pepper to the skillet. Mash the beans slightly while mixing for a creamy texture.
- Stir in lemon juice and a splash of water if necessary to reach a sauce-like consistency. Cook for an additional 5 minutes.
- In another pan, lightly sauté the zucchini noodles in a bit of olive oil for about 2-3 minutes until just tender.
- Toss the zucchini noodles with the fava bean sauce until well coated.
- Serve hot, garnished with fresh parsley.
