Ingredients

  • Dried fava beans - 200 grams
  • Water - 1 liter
  • Garlic - 3 cloves, minced
  • Cumin powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Olive oil - 4 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh cilantro - 2 tablespoons, chopped (for garnish)
  • Lemon - 1, cut into wedges (for serving)

Steps

  1. Rinse the dried fava beans under cold water and soak them in water for at least 8 hours or overnight.
  2. After soaking, drain the beans and place them in a pot with 1 liter of fresh water. Bring to a boil over medium-high heat.
  3. Once boiling, reduce the heat to low and simmer for about 30-40 minutes, or until the beans are soft and tender.
  4. Drain the beans and return them to the pot. Add minced garlic, cumin, paprika, salt, and black pepper.
  5. Using a potato masher or immersion blender, mash the beans until smooth and creamy. If the mixture is too thick, add a little water to reach your desired consistency.
  6. Stir in 2 tablespoons of olive oil for added richness, then taste and adjust seasoning if necessary.
  7. Serve hot, drizzled with the remaining olive oil and garnished with fresh cilantro. Accompany with lemon wedges on the side.
