Ingredients
- Dried fava beans - 200 grams
- Water - 1 liter
- Garlic - 3 cloves, minced
- Cumin powder - 1 teaspoon
- Paprika - 1 teaspoon
- Olive oil - 4 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh cilantro - 2 tablespoons, chopped (for garnish)
- Lemon - 1, cut into wedges (for serving)
Steps
- Rinse the dried fava beans under cold water and soak them in water for at least 8 hours or overnight.
- After soaking, drain the beans and place them in a pot with 1 liter of fresh water. Bring to a boil over medium-high heat.
- Once boiling, reduce the heat to low and simmer for about 30-40 minutes, or until the beans are soft and tender.
- Drain the beans and return them to the pot. Add minced garlic, cumin, paprika, salt, and black pepper.
- Using a potato masher or immersion blender, mash the beans until smooth and creamy. If the mixture is too thick, add a little water to reach your desired consistency.
- Stir in 2 tablespoons of olive oil for added richness, then taste and adjust seasoning if necessary.
- Serve hot, drizzled with the remaining olive oil and garnished with fresh cilantro. Accompany with lemon wedges on the side.
