Ingredients

  • Dried fava beans - 200 grams
  • Water - 1 liter
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Lemon - 1, juiced
  • Fresh parsley - 2 tablespoons, chopped
  • Red chili flakes - 1/4 teaspoon (optional)

Steps

  1. Soak the dried fava beans in water for at least 8 hours or overnight to soften them.
  2. Drain the soaked fava beans and place them in a pot with 1 liter of fresh water.
  3. Bring the water to a boil over medium heat, then reduce to a simmer and cook the fava beans for about 30-40 minutes or until tender.
  4. Once cooked, drain the beans and reserve some cooking liquid.
  5. In the same pot, heat the olive oil over medium heat and add the minced garlic, cooking until fragrant but not browned.
  6. Add the cooked fava beans, cumin, paprika, salt, black pepper, and lemon juice to the pot. Stir to combine.
  7. Mash the mixture with a fork or potato masher, adding reserved cooking liquid as needed to achieve a creamy consistency.
  8. Taste and adjust seasoning if necessary, then serve warm, garnished with chopped parsley and a sprinkle of red chili flakes if desired.
