Ingredients
- Dried fava beans - 200 grams
- Water - 1 liter
- Garlic - 2 cloves, minced
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Olive oil - 2 tablespoons, plus extra for serving
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Lemon - 1, juiced
- Fresh parsley - 2 tablespoons, chopped for garnish
Steps
- Soak the dried fava beans in water overnight or for at least 8 hours.
- Drain and rinse the soaked fava beans, then place them in a pot with 1 liter of fresh water.
- Bring the water to a boil, then reduce the heat and simmer for 25-30 minutes, or until the fava beans are tender.
- Drain the beans, reserving a bit of the cooking liquid, and transfer them to a blender or food processor.
- Add minced garlic, cumin, paprika, olive oil, salt, black pepper, and lemon juice to the blender.
- Blend until smooth, adding reserved cooking liquid as needed to reach desired consistency.
- Taste and adjust seasoning if necessary.
- Serve hot, drizzled with additional olive oil and garnished with chopped parsley.
