Bissara Fava

Ingredients

  • Dried fava beans - 200 grams
  • Water - 1 liter
  • Garlic - 2 cloves, minced
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Olive oil - 2 tablespoons, plus extra for serving
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Lemon - 1, juiced
  • Fresh parsley - 2 tablespoons, chopped for garnish

Steps

  1. Soak the dried fava beans in water overnight or for at least 8 hours.
  2. Drain and rinse the soaked fava beans, then place them in a pot with 1 liter of fresh water.
  3. Bring the water to a boil, then reduce the heat and simmer for 25-30 minutes, or until the fava beans are tender.
  4. Drain the beans, reserving a bit of the cooking liquid, and transfer them to a blender or food processor.
  5. Add minced garlic, cumin, paprika, olive oil, salt, black pepper, and lemon juice to the blender.
  6. Blend until smooth, adding reserved cooking liquid as needed to reach desired consistency.
  7. Taste and adjust seasoning if necessary.
  8. Serve hot, drizzled with additional olive oil and garnished with chopped parsley.
