Ingredients

  • Dried fava beans - 200 grams
  • Water - 1 liter (for boiling)
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Cumin powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh cilantro - 2 tablespoons, chopped (for garnish)
  • Lemon wedges - 2 (for serving)

Steps

  1. Soak the dried fava beans in water overnight to soften them.
  2. Drain and rinse the soaked beans, then place them in a pot with 1 liter of fresh water.
  3. Bring the water to a boil, then reduce the heat and simmer for about 30 minutes, or until the beans are tender.
  4. Once cooked, drain the beans and transfer them to a blender or food processor.
  5. Add olive oil, minced garlic, cumin, paprika, salt, and black pepper to the blender with the beans.
  6. Blend the mixture until smooth, adding a little water if needed to achieve a creamy consistency.
  7. Taste and adjust seasoning if necessary, then transfer the Bissara to a serving bowl.
  8. Drizzle with additional olive oil and garnish with chopped cilantro.
  9. Serve warm with lemon wedges on the side for squeezing over the dish.
