Ingredients
- Dried fava beans - 200 grams
- Water - 1 liter
- Garlic - 3 cloves, minced
- Olive oil - 4 tablespoons
- Cumin powder - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Lemon - 1, juiced
- Chopped fresh parsley - 2 tablespoons
Steps
- Soak the dried fava beans in water overnight, then drain and rinse them.
- In a pot, combine the soaked fava beans and 1 liter of fresh water. Bring to a boil, then reduce the heat and simmer for about 30-40 minutes or until the beans are tender.
- Once the beans are cooked, drain them and set aside a few for garnish. In a blender or food processor, combine the cooked fava beans, minced garlic, olive oil, cumin, paprika, salt, and black pepper. Blend until smooth, adding water as needed to achieve a creamy consistency.
- Transfer the fava bean puree to a serving bowl, stir in the lemon juice, and adjust seasoning if necessary.
- Drizzle with additional olive oil, sprinkle with chopped parsley, and garnish with the reserved whole fava beans.
- Serve warm with crusty bread for dipping.
