Ingredients

  • Dried fava beans - 200 grams
  • Water - 1 liter
  • Garlic cloves - 2, minced
  • Cumin powder - 1 teaspoon
  • Salt - 1 teaspoon
  • Olive oil - 2 tablespoons
  • Fresh parsley - 2 tablespoons, chopped
  • Paprika - 1/2 teaspoon, for garnish

Steps

  1. Rinse the dried fava beans under cold water, then soak them in water for at least 8 hours or overnight.
  2. After soaking, drain the beans and place them in a pot with 1 liter of fresh water. Bring to a boil and then reduce to a simmer for about 30 minutes, or until the beans are tender.
  3. Once cooked, drain the beans and transfer them to a blender or food processor. Add the minced garlic, cumin powder, salt, and a little water as needed to achieve a smooth, creamy consistency.
  4. Blend until you have a thick puree, adding more water if necessary to reach your desired texture.
  5. Transfer the fava bean puree to a serving bowl, create a small well in the center, and drizzle with olive oil.
  6. Sprinkle chopped parsley and paprika on top for garnish. Serve warm with fresh vegetables or sliced avocado.
