Ingredients
- Dried fava beans - 200 grams
- Water - 1 liter
- Garlic - 3 cloves, minced
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Olive oil - 2 tablespoons, plus extra for drizzling
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - 2 tablespoons, chopped, for garnish
Steps
- Rinse the dried fava beans under cold water and soak them in a bowl of water for at least 8 hours or overnight.
- Drain and rinse the soaked fava beans, then place them in a pot with 1 liter of fresh water.
- Add minced garlic, cumin, paprika, salt, and black pepper to the pot, and bring to a boil over medium-high heat.
- Once boiling, reduce the heat to low, cover the pot, and simmer for about 30-40 minutes, or until the fava beans are tender.
- Remove from heat and let cool slightly, then transfer the mixture to a blender or food processor.
- Blend until smooth, adding a little more water if necessary to achieve a creamy consistency.
- Taste and adjust seasoning if needed, then drizzle in 2 tablespoons of olive oil and blend again briefly to combine.
- Serve warm in bowls, drizzled with additional olive oil and garnished with chopped parsley. Enjoy with crusty bread.
