Ingredients

  • Dried fava beans - 200 grams
  • Water - 1 liter
  • Olive oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Cumin powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon - 1, cut into wedges

Steps

  1. Rinse the dried fava beans under cold water and soak them in water for at least 8 hours or overnight.
  2. Drain the soaked beans and place them in a pot with 1 liter of fresh water. Bring to a boil over medium heat.
  3. Reduce the heat and simmer the beans for about 30 minutes or until they are soft.
  4. Once cooked, drain the beans and transfer them to a blender. Add minced garlic, cumin, paprika, salt, and black pepper.
  5. Blend the mixture until smooth, adding a little water if necessary to achieve a creamy consistency.
  6. Return the blended mixture to the pot and heat over low heat, stirring occasionally for about 5 minutes.
  7. Drizzle with olive oil and stir in chopped parsley just before serving.
  8. Serve warm with lemon wedges on the side.
