Ingredients
- Dried fava beans - 200 grams
- Water - 1 liter
- Olive oil - 2 tablespoons
- Garlic - 3 cloves, minced
- Cumin powder - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Lemon - 1, cut into wedges
Steps
- Rinse the dried fava beans under cold water and soak them in water for at least 8 hours or overnight.
- Drain the soaked beans and place them in a pot with 1 liter of fresh water. Bring to a boil over medium heat.
- Reduce the heat and simmer the beans for about 30 minutes or until they are soft.
- Once cooked, drain the beans and transfer them to a blender. Add minced garlic, cumin, paprika, salt, and black pepper.
- Blend the mixture until smooth, adding a little water if necessary to achieve a creamy consistency.
- Return the blended mixture to the pot and heat over low heat, stirring occasionally for about 5 minutes.
- Drizzle with olive oil and stir in chopped parsley just before serving.
- Serve warm with lemon wedges on the side.
