Ingredients
- Dried fava beans - 200 grams
- Water - 1 liter
- Olive oil - 2 tablespoons
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Fresh parsley - a handful, chopped
- Lamb shoulder - 200 grams, cut into small pieces
- Garlic - 2 cloves, minced
- Lemon - 1, for serving
Steps
- Rinse the dried fava beans under cold water and soak them in water overnight.
- Drain the soaked fava beans and place them in a pot with 1 liter of fresh water. Bring to a boil and then reduce heat to simmer for about 30-40 minutes, or until the beans are soft.
- In a separate pan, heat 1 tablespoon of olive oil over medium heat. Add the lamb pieces and brown them on all sides.
- Add minced garlic to the lamb and sauté for another 2 minutes until fragrant. Season with salt, cumin, coriander, and paprika, then add a little water to keep the lamb moist. Cover and cook on low heat for 30 minutes or until the lamb is tender.
- Once the fava beans are cooked, drain them and transfer to a blender. Add 1 tablespoon of olive oil, salt, and a little water to achieve a smooth, creamy texture. Blend until fully combined.
- To serve, place a generous portion of the fava bean puree in a bowl, top with the lamb, and garnish with chopped parsley. Serve with lemon wedges on the side.
