Ingredients

  • Dried fava beans - 200 grams
  • Garlic - 2 cloves
  • Cumin powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Water - 750 milliliters
  • Fresh parsley - for garnish

Steps

  1. Rinse the dried fava beans under cold water and soak them in water overnight.
  2. Drain the soaked fava beans and place them in a pot with 750 milliliters of fresh water.
  3. Add the garlic cloves, salt, cumin, paprika, and black pepper to the pot.
  4. Bring the mixture to a boil, then reduce the heat to low and allow it to simmer for about 45 minutes, or until the beans are tender.
  5. Once cooked, drain the beans and transfer them to a blender or food processor.
  6. Blend the beans with 2 tablespoons of olive oil until smooth and creamy, adding a little water if necessary to reach your desired consistency.
  7. Taste and adjust seasoning if needed.
  8. Serve the Bissara warm, drizzled with extra olive oil, and garnish with chopped fresh parsley.
  9. Enjoy with crusty bread for dipping.
